Chicken mushroom curry..

  1. Cut the chicken to your desired size. I used boneless chicken thigh.
  2. Heat a pan and pour oil. I used coconut oil.
  3. Fry the chicken. Put salt and pepper to taste.
  4. In the meantime, I made the gravy in a different pan. I actually made the gravy in a pressure cooker because it takes only few minutes to cook.
  5. Put minced garlic, onion, mushroom and diced tomatoes in the cooker. I also added curry powder, turmeric powder, and generous amount of red chilli pepper(Did you know that hot/spicy food helps increase metabolism!). I added a cup of water and pressed it for few minutes. You can add oil if you want or use a pan instead of pressure cooker.
  6. Once the chicken are nicely fried and brown in color, mix the gravy in it.
  7. Add cilantro. Serve it hot with rice or tortilla.
